Flourless Chocolate Cake 8 inch (GF)

The truffle-style texture is exactly what I hoped for—dense, smooth, and intensely rich from that 70% chocolate. It held its shape beautifully after slicing and stayed moist even on day three in the fridge. Gluten-free guests couldn't tell the difference.

Baked this for a dinner party and even my gluten-free friend could enjoy a slice—the truffle-style texture was so rich and fudgy, it didn’t need any flour.

The 70% chocolate gives it that deep, almost bitter richness I love—not too sweet at all. Even my gluten-free friends couldn’t tell the difference from a regular cake. We polished off the whole 8-inch cake in one sitting.
